Ingredients
Vinaigrette:
2 Cups Procuitto, Small Dice
2 Tbsp Mustard, Dijon
¼ Cup Sherry Vinegar
¼ Cup Honey
3 Tbsp Japanese Chili Paste
½ Cup Chives, Finely Cut
3 Cups Grapeseed Oil
To Taste Salt
To Taste Lemon Juice, Fresh and Strain
Garnish With:
Micro Cilantro
Directions
For the Vinaigrette:
1. Fry the procuitto in the deep fryer until crispy.
2. In a medium combine all the ingredients together and lightly emulsify.
3. Garnish with chervil.
